Rimarts Cava is a recent addition to the American market. As a long time Cava lover, I must tell you that this is an exceptional Cava with more flavors than most. From the village of Sant Sadurnì d'Anoia, in the Penedès region south of Barcelona, this is a family operation run by two brothers, Ricard and Ernest Martinez. They make only 5000 cases a year and the wines have at least two years of aging prior to release. Two bottles, 6 Schott Zwiesel Champagne glasses, instant party.

In the green, rolling hills of Rias Baixas in northwest Spain, the upper left-hand corner of the Iberian peninsula, one grape dominates the wine landscape: albariño. A thick-skinned, aromatic white grape capable of great complexity and mouth-watering acidity, albariño is the perfect companion to the countless varieties of seafood that dominate the region. A wonderfully delicious example of this wine is Sete Cepas. Made by seven brothers ("sete cepas" in Spanish means seven strains) under the Carballal label, this wine offers aromas of both citrus and stone fruits, and the palate provides a firm structure of bracing minerality, with a finish that is crisp and clean. Well-balanced, and offering a pleasant alcohol level of only 12.5%, it is the perfect wine for a warm summer day.

Too many people in the wine world have lost sight of Malaga in southern Spain, and the dry wines made from the bright, effervescent muscat that grows there. But not Jorge Ordoñez. The groundbreaking Spanish importer is working almost single-handedly to resurrect a number of Spain's more underappreciated growing regions. If his work in Malaga, and his Botani bottling specifically, is any indication of the wonders he has in store, fans of smart, interesting wines need to start paying attention. Composed of 100% Muscat Alexandria, the straw-colored Botani offers alluring aromas of grape, apple and mandarin orange, accompanied by delicate notes of dried flowers. Fruity and dry on the palate, and balanced with plenty of food-friendly acid, this wine's finish lasts only as long as you can resist the next sip. Botani is a great accompaniment for all sorts of dishes, from shellfish and sushi up to heavier items, such as seafood risotto. And it has all the components to stand up to spicy Thai or Indian cuisine. Also, perfect as an aperitif.

A wine that receives consistently stellar reviews, it has one of the best quality-price ratios available. So, what's it like? Well, the folks at Borsao say it best: "Deep and sweet, Tres Picos Borsao is cherry red in color with a hint of purple tones. In the nose, there is a boundless bouquet of mature red fruits with traces of flowers that are typical of the best Garnachas. A unique wine produced from "Tinta" grapes grown in the sandy soils around the town of Rota, in the Jerez production zone. Viscous, with an unmistakable dark reddish color. Redolent of ripe fruit. Rich, sweet, velvety and soft in the mouth, well balanced, with a long finish, showing the wine's great age. Enjoy with rich desserts, cakes and pastries, or pour a little over the best quality vanilla ice cream. The Montilla-Moriles wine region is located about 125 miles north and inland of the Sherry region and makes wines in a similar style. These wines are well worth exploring for their outstanding quality and character, highly recommended.

- ENJOYING SHERRY WITH FOOD -
With its range and diversity of styles, Sherry is one of the most versatile of all wines. Think of a food, and there will be a Sherry to accompany it.

Fino and Manzanilla - Light in color, dry and delicate in taste.
Don't just think of Fino and Manzanilla as aperitif wines. Some of the world's greatest white wines, they are just as happy as part of a meal, as versatile as any white wine. Certainly both will be drunk to accompany the tapas that form such a vital part of the Andalusian meal. Fino and Manzanilla are the Sherries that must be chilled.  

Amontillado - Amber color, classical dry through to medium.
Shellfish and Fino, a perfect partnership. Amontillados are versatile. Delicious on their own they are equally an accompaniment to soups, especially light meat soups such as consommé. But they also go with so many other foods: seafood, game dishes and meat terrines. Amontillados should be served cool, but not too chilled.  

Palo Cortado and Dry Oloroso - Amber gold, powerful and dry.
Palo Cortados and Olorosos are concentrated wines for rich foods. They partner cheeses, very rich meats such as venison and smoked game. These wines should be served slightly cooled.

Sweet Oloroso and Cream - Dark golden color, rich and sweet.
Fine sweet Olorosos and Creams can be consumed with many fruit based desserts, or as an after-dinner digestif. For those with a sweet tooth, one of the great Sherry and food combinations is that of vanilla ice cream drenched in some of the immensely sweet Pedro Ximénez Sherry. These wines should be served in copitas, slightly chilled if the day is warm but at warm room temperature as a warming drink if the weather is cold.
